In reply to Jordan. Hi Jordan! Place a bowl on you scale and hit zero/tare to tare the bowl out. Then add your entire mass of dough. Divide the number by 12 to give you your exact weight for each roll :)

My first go with homemade rolls, followed the recipe to the letter, they were wonderful!! Big, bready and an absolute delight!

In reply to Emily. Hi Emily! Just in case your rolls spill over as they rise and bake, I would recommend using a pan with higher sides, or using two 9x13 pans as you mentioned. This will also ensure that your rolls are uniform and pretty, as well as baking evenly. I hope that helps! Happy baking :)

I’m planning on doubling this recipe. Could I bake the rolls on a half sheet pan or would two 13x9s be better? All one pan would be easier but I’m not sure if they need the support from the sides of the pan.

is it possible to make these ahead of time and freeze the unbaked dough? what would be the best way to unthaw and bake?

Just a follow-up: I’ve made these every year for Thanksgiving dinner over the past 10 years! They’re always great and a family favorite.
